Gluten free Mini Muffins

Here is a gluten free recipe for people like myself who try and avoid wheat, dairy, sugar, but also would like to occasionally enjoy something healthy, tasty and simple. There are tons of recipes out there and I found this one works best for me because I adjusted the measurements so I ended up with a smaller batch (this makes about a dozen mini muffins) instead of most recipes that call for a couple dozen.

Gluten free, dairy free chocolate chip muffins

1/4 cup coconut flour
1/4 tsp baking powder
1/4 tsp salt
3 organic eggs 
2 tablespoons coconut oil
2 tablespoons honey or maple syrup
1 tsp vanilla extract
1/4 cup dairy free chocolate chips

-Preheat the oven to 400 degrees. 

-Whisk coconut flour and baking powder together in a separate bowl.

-In another bowl, mix eggs, coconut oil, salt, honey or maple syrup.

-Add liquid ingredients to dry ingredients and mix until combined.

-Fold in chocolate chips or and/any other additions you would like.

-Bake in the oven for about 15- 18 minutes until toothpick inserted and comes out clean.
